Garden Veggie Chickpea Sandwich Recipe

– Prepare 15 ounces of canned chickpeas
– 3 leeks, finely chopped
– 2 celery sticks, finely chopped
– 1/4 Carrot, grated
– 1/4 chopped paprika
– 1/4 chopped pickles
– 1/4 Cup low-fat mayonnaise (can use vegan mayonnaise)
– 1-2 teaspoons of mustard
– 1/8 Dill dry (optional)
– 1/8 teaspoon salt
– 1/8 teaspoon black pepper
– 3 tablespoons unsalted sunflower seeds
– 2 Tablespoons chopped basil

Sandwich material:
– Wheat bread
– Lettuce
– Basil leaves (optional)
– Tomato (optional)
– Onion (optional)
– Spread for sandwiches (can be spicy mustard mayonnaise, and ketchup)

How to cook:
– Put the chickpeas in a large bowl, then mash using a potato smasher or you can use a food processor
– Pour the chives, grated carrots, celery, pickles and black pepper into a bowl. Mix well
– Add mayonnaise, mustard, dill, salt, sunflower seeds and pepper
– Arrange the slices of whole wheat bread, place the basil and lettuce as desired
